Carlos Acevedo is the research and innovation chef at Yesway Convenience Stores, a dynamic Midwest start-up known for its exciting growth strategy and a commitment to excellence. His mission is to develop cutting edge dishes that help enable Yesway to stay competitive in an ever-evolving culinary landscape.Whether it be crafting the perfect made-to-order burger recipe or designing a unique food truck, Carlos relies on the same recipe for success: equal parts culinary passion, native creativity and consumer insight. He first learned that he loved the food business as a teenager selling soft serve at an ice cream shop.
Later, he pursued advanced training at the prestigious Culinary Institute of America in New York. After working in top restaurants in New York City and Seattle, he ventured into the world of culinary media for 10 years as an editor and then test kitchen director before returning to his first love—foodservice—in 2017 as part of the senior management staff at Yesway.
Des Moines, Iowa-based Yesway currently operates more than 100 convenience stores in Missouri, Iowa, Kansas, Oklahoma and Texas. It was named a 2017 Chain to Watch by Convenience Store Decisions and has plans to acquire, improve and rebrand 500 convenience stores in selected regions of the U.S. over the next several years.
